Yes Nickers bars, no S for sugar!

I still love chocolate and choccie bars, but since giving up sugar I have to remind myself I’m not avoiding flavours but the feeling I get after I eat a sugary treat. Mostly now I need a nap!

Im not going to waffle on, as you need to make these beauties NOW!

The secret is in the peanuts…caramel made with peanut butter and the nuts on top have to be salted, it is this combination of sweet and salty caramel that makes them taste like the real deal!

Nickers Bars Recipe


1/2 cup GF oats
1/2 cup ground almonds
1/2 cup dessicated coconut
1/2 cup cashews
1/4 cup of rice malt syrup (you can use maple or honey, although honey has a very strong overpowering taste and will no longer taste like the original bar)
1/4 cup of your milk of choice (I used rice milk)


1 cup of dates
1/4 cup coconut oil
1/4 cup of peanut butter (100% peanuts only. Use bintis peanut butter its ace!
1/4 cup of rice malt syrup or maple

Chocolate Topping

1/3 cup cacao powder
1/2 cup coconut oil
1/4 cup maple syrup… you can try another syrup but it’s a runny liquid consistency you are after.

And a cup of salted peanuts!

How to:

For the base, put all dry ingredients in a food processor until finely ground. Add the syrup and milk to create a thick paste. Press the base into a tin (roughly 6″ square tin works well) put in the freezer whilst you make the caramel.

For the caramel put all ingredients into your food processor until it makes a gooey lump… this may take some time, but be patient, the slightly warmed blades will help everything bind. Press the caramel on top of the base using the back of a metal spoon until smooth. Place it back in the freezer for 30mins.

After 30 mins take out your 2 layers and cut into bars and place the bars back in the freezer.

The chocolate topping is easy, mix all together until no cacao lumps are visible.

Place your frozen bars over a drying rack with a bowl to catch your chocolate topping. IMG_6086Sprinkle some salted peanuts on top of your bars and then liberally drizzle the chocolate sauce to cover them. As the chocolate hits the cold it will set, very cool! Before it sets completely add some peanuts on top and they are ready to eat!!!

Keep them in the fridge or freezer. Remember to let them defrost before eating, I don’t fancy paying any dentistry bills!
